Dear friends.
It's getting colder and colder, pretty soon winter will be
at full strength and I'm going to be hiding inside trying to stay warm.
Selections are
getting slim for locally grown produce from our New York area farmer’s market,
but you can still find:
Leeks, Kale, Lettuce, Potatoes,
Broccoli, Cauliflower, Peas, Pumpkins, Squash, Turnips and more. You can also
find the last of the Apples and Pears.
I am so busy this time of the year with dinner parties,
holiday parties, gift certificates and all of my regular chef services. I just
wanted to wish you all the best for the upcoming holiday season.

The definition of gourmet food is very simple. It is food that is intended
to be eaten by gourmets. The real problem is defining the gourmet.
Gourmet food is a phrase that cannot be adequately defined in any other way
than to say it is food that is prepared to be eaten by the gourmet. However,
this actually tells you quite a bit about it. A gourmet is a person with
discriminating taste. They are very knowledgeable about food and are able to
not only distinguish unique and carefully prepared dishes, but more
importantly to appreciate them. In some people's minds, the gourmet is
snobbish and hard to satisfy. While they may be hard to satisfy in many
cases, snobbish is not a trait that defines the gourmet at all. Individuals
might vary, but for the most part the gourmet is not concerned about the
eating habits of others. They are more concerned about their own tastes and
palates.
This does not mean that one must be a dyed in the wool gourmet to appreciate
gourmet food. It is more important to realize that since gourmet food is
intended for gourmets, it will possess a certain quality that would satisfy
the most discriminating tastes. If your own taste is not quite that
discriminating, you might find yourself even more pleased since your
standards would be lower.
People also tend to think of gourmet food as exotic and rare. Some of it is
exactly that. It is made from ingredients that are not very common and in
some cases expensive because of their rarity. However, some of it is made
from very common foods. It is really more a matter of the attention to
detail and the care in preparation that defines it.

The presentation is often as important as the taste in defining gourmet
foods. This is something that is unique about it. The term haute cuisine is
closely related to gourmet food. The word is from the French meaning "high
cuisine", and again it does not refer to anything more than the highest
standards in the selection, preparation, and presentation of food.
There was a science fiction story written once that told of an alien who was
evaluating the planet earth in much the way a critic evaluates a work of
art. Near the end of the story, as he is about to return to his own planet
to file his report, he comments that humans are unique in the universe in
that they have taken the simple act of eating and turned it into art. All
living organisms must take in nourishment of some type and convert it to
energy. It is a basic need. Animals simply eat their food. Preparation is
not important. Yet, humans have converted this simple act of nature into
something involving social and visual traditions. Gourmet food represents
the highest form of this art.
The lovers of gourmet food are the beneficiaries of this artistic endeavor.
We eat so that we may live. This fact is not altered by the fact that we
invest so much effort and time into the preparation of food that is a feast
for our senses. What is gourmet food? It is a work of art. It is the result
of much effort and imagination. It is a treat for the eye and a delight to
the nose. It tickles our taste buds and, ultimately, we can eat it and it
helps keep us alive. All and all, it is a pretty good deal.

If you're
like me or many others, perhaps you also have problem in maintaining a
healthy diet during the holiday season. I know many people do fasting the
week before Thanksgiving Day so that they don't feel guilty when sitting
down and enjoying the feast during this holiday. This has sometimes been the
norm rather than the exception.
If you have
an all year long diet that you want to maintain, here are some tips for
sticking to it without having to fast or worry about gaining the extra
pounds.
Before you
start the holiday feast with your families or friends, drink a few glasses
of water and have some protein snacks. This will help to alleviate the need
to begin nibbling before the feast commences. You can apply this tactic
every time when you are invited to a party or gathering.
Prepare a
vegetable tray for guests with a low fat dip. If you have been invited to
someone's home, bring a vegetable tray as well. It is not only healthy but
is a wonderful alternative for others who may be dieting as well.
Check out
some recipes online that can be incorporated in preparing holiday meals and
which offer substitutes for high-fat content. In addition, instead of the
array of desserts traditionally served every year, why not make an angel
food cake and top it with berries and low fat whipped cream.

Serve
vegetables along with the Thanksgiving turkey. This is not only a healthy
alternative to stuffing but can be served in many different ways. If serving
a salad, use low fat dressing. A delicious homemade vegetable soup can be
prepared as a second course instead of pasta.
There are so
many different ways in which to use alternative or healthy foods during the
holidays, yet still enjoy every morsel. Moreover, portion control is the key
to maintaining any diet. We all know that holiday fare consists of many
courses. Take a walk with family members or friends in between courses. If
the weather permits, play a game in the backyard. Just remember to always
substitute foods high in fat with recipes that are just as pleasing to the
eye and taste as the traditional foods offered during the holiday season.
These are
just some tips to help you maintain a healthy diet and enjoy the holidays at
the same time.

There are three goals that almost everybody has in common, they are to live
longer, live free of illness and to manage our weight. Amazingly, walking
lets us achieve all three. Walking may be considered one of the best
medicines for slowing the aging process reducing your chances of illness and
slashing your body fat.
If you are out of shape or over weight walking is the low stress, no sweat
answer to life long conditioning. All you really need is a good pair of
shoes a little motivation and a few tips from a fitness professional.
Walking has always been one of the best exercises for your bones,
controlling your weight, toning the muscles in your lower body, maintaining
good posture and improving your self image.
When your walking you use most of the muscle in your body plus you improve
your circulation. Walking also helps you maintain muscle and an efficient
metabolism as you get older (not to mention keeping you young "in spirit.")
Walking is so easy to do , We do it every day with out even thinking about
it. Since you don't need a gym or any special equipment, you can walk any
place, at any time and that allows you to lose weight and get fit with
little or no interruption to your busy schedule.
People who diet but don't exercise tend to get fatter over time. Although
your weight may initially drop while dieting, weight loss from low calorie
and especially low carb diets consists mostly of water and muscle. When the
weight returns, it comes back as fat. To avoid getting fatter over time, you
must increase your metabolism by exercising daily.
To get the most from you walk you need to walk briskly because it burns more
fat. Just remember begin slowly to avoid muscle soreness, and increase your
pace over time as you become more fit.

To lose weight, it's ideal to alternate your walking sessions between high
intensity and lower intensity days. For example, on one day walk for 30- 45
minutes as a steady and moderate pace. On the next day, walk at a faster
pace. You could even do "road work" like the boxers do, where you break up
your walk along the route with some sets of squats, lunges, bench push ups
or other body weight or callisthenic exercises to make it a real
cardiovascular and muscle blaster of a workout! It doesn't have to be boring
or the same thing every day. Make it fun and keep it up consistently,
leading an active life-style 365 days a year.
Try to keep a good posture when you walk because this will help prolong your
energy levels so you can burn more fat. Carbohydrates are high-octane fuel.
They provide energy for movement and help raise internal body metabolism.
They're also satisfying. The key is to avoid adding high-fat and high
calorie toppings to your carbohydrates. Also be sure to focus on fruits and
vegetables and do not eat the majority of your carbohydrates from the starch
category such as bread, pasta, rice, and potatoes. These type of carbs can
create an insulin spike, which in turn feeds your fat storing system.
Fruits and vegetables are the ideal health, diet and fat loss foods for many
reasons. They're relatively low in fat and calories, high in fiber and rich
in essential vitamins and minerals. The National Research Council recommends
eating five or more servings of fruits and vegetables a day.
Remember even a three minute walk after meals can make a difference or
taking the stairs instead of the elevator. If you are just starting out pick
a goal that is easy reach. Remember it's not how far you walk but how long.
the point is to get your heart beat up. After you get better and better try
adding ankle weights and wrist weights.
To lose weight and achieve optimum health, exercise and diet are both
necessary and interrelated. Exercising without maintaining a balanced diet
is no more beneficial than dieting while remaining a couch potato.
